All the best rechargeable AA and AAA size batteries use NiMH (Nickel Metal Hydride) chemistry, but lithium-ion batteries can store even more energy. There are lithium-ion batteries in other forms - such as RCR-123A. Why are there no AA or AAA lithium-ion batteries?

Reason is chemistry. Typical Lithium cells work on the 3V range, defined by the chemical reactions inside. No 1.5V cell can be built.
Battery manufacturers will not produce 3V Lithium AA or AAA batteries to avoid users installing them in 1.5V sockets - so no device will burn and no legal claims will arise...
